Fresh Garlic Extract (FGE)
The main organosulfur compounds in FGE include allicin, alliin, allyl cysteine, and allyl disulfide—responsible for garlic's distinctive odour and flavour.

The resulting component profile includes sulphur-based and water-soluble compounds S-allylcysteine (SAC) and S-allylmercaptocysteine (SAMC), derived from allicin in FGE. These compounds make AGE less sharp and odorous than its fresh counterpart and also higher in antioxidant flavonoids and phenols.

Maintenance of Cardiovascular Health and Blood Lipids

Both AGE and FGE have been shown in pre-clinical and human trials to support cardiovascular system health. They help maintain healthy arteries, blood flow, blood lipids, homocysteine, lipoproteins, apolipoproteins, inflammatory markers, platelet function, and antioxidant status.

Garlic also assists in the maintenance of healthy blood fats, influencing enzyme systems involved in fatty acid synthesis, hepatic metabolism, and bile conjugation.

Immune System Function

Garlic acts as an immunomodulator in both the innate and adaptive immune systems. It supports Natural Killer cells, TNF-α, interleukins, macrophages, and lymphocyte proliferation. It may also protect against age-related declines in immune function and supports T-cell activation and the humoral immune response.
